Unlike coffee, all tea is actually healthy to drink in varying degrees and ways. In general, the less processed a tea is, the more antioxidants and less caffeine it has. The spectrum from White to Black teas increases in processing each time. Herbal tea is not made from the same plant, so most Herbal tea is naturally caffeine-free and has different health benefits.

The story of tea began in ancient China. It was said that in 2737 BC, the Chinese emperor Shen Nong was sitting beneath a tree while his servant boiled drinking water for him, when dried leaves from the tree blew into the water. A brown liquid was infused into the water. Shen Nong, was curious about the new liquid, decided to try the infusion that his servant had accidentally created. Shen Nong found the liquid very refreshing. Thus as a herbalist he began his fascinating search to identify and classify tea variety and quality. And so, "Cha" was discovered in China. "Cha" is a Chinese word for tea. From his discovery tea as is known worldwide now has become part of the lifestyle of many nations. It has become a general beverage in every corner or the world today.

All teas have a shelf life. The enemies of tea are air, light, moisture, and odours from spices or other foods. To preserve its freshness as long as possible, tea should be stored in a cool and dry place, in a container that is opaque and airtight. An airtight tin is best. Since tea absorbes other odours very easily, it is important to store it away from any strong-smelling foods. DO NOT refrigerate or freeze teas.
Green Tea is the least processed of all tea types. Green tea stays that way because the leaf undergoes a different process that prevents fermentation. Green teas are produced by a process that does not include oxidation, this process is sometimes referred to as fermentation (in contrast, black teas are oxidized, or exposed to air.) As soon as the leaves are plucked from the plant they are steamed initially to kill the leaf (Sencha, Gyokuro). Most are first withered by simply letting some of the leaves' moisture evaporate, making the leaf pliable.
Chinese tea can be grouped into several categories which are Green Tea, White Tea, Yellow Tea, Red Tea, Black Tea, Oolong Tea, Pu Er and Scented Tea. Each category is based on individual quality, taste, tea color, and production as well as processing techniques. Products of each variety are further classified according to grades.
